When people think of fudge, they probably assume that they are hard squares of dark chocolate. But there are so many possibilities when it comes to fudge that it is fun to try out new recipes for it. Toffee is great for the holidays, either as a gift or as a sweet treat, and this white chocolate cranberry toffee just looks so festive! And the creaminess of the white chocolate just melts on the tongue.
So today I’m doing something new, and I’m totally excited about it – cheater! And I start off easily with this white chocolate cranberry fudge. White chocolate and cranberries are easily one of the best taste combinations for the vacations, so it’s a must to quickly put together a treat.
Ingredients
2 cups sugar
3/4 cup sour cream not light
1/2 cup unsalted butter
1/2 tsp salt
1 cup white chocolate chips
7 oz marshmallow creme 1 jar
1 tsp vanilla extract clear vanilla extract if you want whiter fudge
5 oz dried cranberries 1 bag – or Craisins
Instructions
Line a 9×13 baking tin with foil and spray lightly with cooking spray.
Mix sugar, sour cream, butter and salt in a heavy pot of 2 qt.
Bring the mixture to the boil over medium heat, stirring frequently.
Continue to boil while stirring occasionally until soft-ball stage (238 degrees).
Remove from heat and stir in chocolate pieces until they are completely melted. This takes a few minutes ?
Stir in the marshmallow cream and vanilla extract until smooth and mixed.
Stir in the dried cranberries until they are evenly distributed.
Pour into the casserole dish and allow to cool to room temperature.
Chill in the refrigerator for several hours before cutting into squares,
Store in an airtight container.
