Chips and Cheese Sauce Recipes

Ingredients

For the chips 1 potato, cut lengthways into chips, skin left on 1 tbsp olive oil salt and freshly ground black pepper For the gammon 1 tbsp clear honey 1 tbsp wholegrain mustard 1 tbsp olive oil 1 x 140g/5oz gammon steak For the cheese sauce 1 tbsp butter 1 tbsp plain flour 4 tbsp milk 4 tbsp double cream salt and freshly ground black pepper 55g/2oz cheddar, grated For the fried egg 1 tbsp olive oil 1 free-range egg

Method

  1. Preheat the oven to 200C/400F/Gas 6. 2. For the chips, place the potato pieces onto a non-stick baking sheet, drizzle with olive oil and season with salt and freshly ground black pepper. 3. Transfer to the oven and bake for 15 minutes, turning the chips over once, until golden-brown and crisp. 4. For the gammon, place the honey and mustard into a bowl and mix well. 5. Heat the oil in an ovenproof frying pan over a medium heat and fry the gammon for 3-4 minutes on each side. Brush the top of the gammon with the honey and mustard glaze and transfer to the oven to cook for a further 5-6 minutes, or until completely cooked through. 6. For the cheese sauce, heat the butter in a small saucepan. Add the flour and cook, stirring frequently, for two minutes. 7. Add the milk and cream gradually, stirring well between each addition.Season with salt and freshly ground black pepper, then remove from the heat and stir in the cheese until melted to make a smooth sauce. Set aside to keep warm. 8. For the fried egg, heat the oil in a frying pan and fry the egg until the white is set and the yolk is runny. 9. To serve, place the chips onto a plate. Top with the gammon and the fried egg and drizzle over the cheese sauce.
